MATZO BREI

 
 
Six pieces of Matzo
Seven eggs
Two teaspoons grated Parmesan cheese
Two teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon salt
Small sprinkle of black pepper
½ cup honey
2 tablespoons butter or margarine
Non-stick cooking spray
Jam, fresh fruit or maple syrup for topping
 

  1) Place matzo in a big bowl and break into large pieces

  2) Rapidly fill bowl with cold tap water until matzo is just covered, then immediately pour out water while holding matzo back with your hand.

  3) Break eggs into a bowl and scramble.

  4) Add cinnamon, nutmeg, grated cheese, salt, pepper and honey (hint- microwave honey to make it easier to pour) to eggs and mix together.

  5) Spray a twelve-inch frying pan with cooking spray and add butter on medium heat.

  6) Put matzo in frying pan when butter is melted. Use a fork to spread the matzo out evenly.

  7) Slowly pour the egg mixture over the matzo so that it covers all of it. Use fork to again level out matzo, making sure it is well pressed into egg mixture.

  8) Turn heat down to low.

  9) After about five minutes, section matzo into quarters while it is cooking and turn over each quarter separately when it is browned.

10) When second side is lightly browned, it is ready. Note: the middle should still be moist.
